Full text of this version
Aash is a warming noodle dish traditionally served in winter. The word means a thick soup in Persian, and versions are found across Iranian, Afghan, Azerbaijani and Pakistani cooking.1
One account of traditional Hazaragi aash describes plain noodles with kashk or ayran (yoghurt), fresh mint and salt. In the Hazarajat it may be topped with a powdered mint-like plant from Bamyan.2 In Quetta, it is served with yoghurt, chickpeas and minced meat.1
