Full text of this version

Ashak are dumplings of thin wheat dough, commonly filled with garlic chives or leeks seasoned with spices.12 They are boiled, then layered with yoghurt and a topping such as minced meat or chickpeas.2

The dish is eaten across Afghanistan and is popular in Balochistan. In Quetta, the Hazara cook Tayyaba Batool of Naan-e-Khana shows how it is made, in a film and recipe by the SOCH Outreach Foundation.2
